Four jobs, and what each one pays

Salaries are published because a restaurant that will not print a number is usually hiding one. Everything below is monthly, gross, and before the box by the door is split.

Chef de partie — fire

Kitchen · full time

Everything that touches charcoal, working directly under Nii on the grill section.

Two years in a professional kitchen. You will be taught the rest.

Prep, the garden plate, and whichever section is short that week — which is how everybody here learned.

No experience needed. Curiosity and turning up on time are the whole requirement.

Four tables a service, carving and pouring at the table, and knowing the whole menu properly.

One year on a floor somewhere. You will be trained on the wine by Selorm.

What we offer

Six things that are true of every job here

Two days off, together

Sunday night and Monday, every week, for everybody. Nobody's rota is different.

The box is split evenly

Kitchen and floor, counted at the end of every night. Nobody senior takes a larger share.

Family meal, properly

Cooked by whoever is on it, eaten sitting down at five, and never the trimmings.

A trip a year

Every full-time cook spends a week in another kitchen, paid, somewhere they chose.

No shouting

It is not a style of leadership here, it is a reason to be let go. This has been tested twice.

A section of your own

Everybody who stays two years runs something with their name on it.

The honest part

It is hard work, and Saturday is very hard work

Fifty-two covers on nine courses means four hundred and sixty-eight plates leaving one pass in three hours, and every one of them checked. Service starts at six and the kitchen is not clean until half past midnight.

What we can promise is that it will be hard for good reasons, that you will be taught something every week, and that nobody will raise their voice at you while it happens.

Tell her what you have cooked and what you want to learn. There is no form. Every application is read by a person and answered within a week, including the ones we say no to.
