Working the charcoal alongside Nii, five evenings a week. You will spend a year on prep and the pass before you are given the grate, and that is not negotiable.

The long-cooked half of the kitchen, under Adjoa. Palm nut from the fruit, groundnut ground here, and fufu pounded by hand every single service.

Sixty-four seats and a yard, run by four people on a busy night. You need to be able to carry three plates and remember which table asked about the pepper.

Shifts from four hours; evenings and weekends

English and Twi; Ga is a genuine advantage

Honestly

It is hot, it is loud, and we finish late.

Charcoal makes a kitchen ten degrees hotter than gas does. Fridays run past midnight. Nobody here will pretend otherwise to get you through the door and then act surprised in month two.

What we will promise: your rota a fortnight ahead, your wages on the last working day, one weekend off in four in writing, and nobody shouting at you in front of a full room.
