Whatever the boats land before six is what the kitchen cooks that evening. What they do not land is not on the board.

A Coast Kitchen Built Entirely On the Morning's Catch.

Tide began as six tables under a tarpaulin, buying whatever came off the Elmina boats and cooking it before noon. Twelve years on the terrace holds two hundred and the rule has not moved: we buy the whole boat, we cook it that day, and we put the price on the board.

The Elmina and Tema boats land before six. What they bring is what the kitchen cooks, and what they don't is not on the board.

The Oyster Bar

Keta oysters shucked to order at the far end of the terrace, with lime, shallot and a spoon of kpakpo shito.

Fire & Charcoal

Whole fish over coals, turned by hand, with banku, kenkey or plain rice and a bowl of pepper beside it.

The Bar Until Late

Palm-wine spritzes, sobolo coolers and a short list of gin, poured until the last table on the terrace leaves.
