Grill cook

Full time, five days, on the coals from three until close. No formal experience needed — Esi trains everyone on the line herself and has never taken anyone who came in already knowing.

Four evenings, Thursday to Sunday, shucking on the terrace in front of guests. Steady hands and the patience to talk to people while you work.

Full or part time. You will need to be able to explain a board that changes daily, which means eating here on your day off and actually wanting to.

Six until close, four nights. Palm wine, sobolo and a short spirits list — Akosua will teach the rest.

Write anyway. Roughly a third of the current team joined without a vacancy being open, because they came in and asked at a sensible hour.

Hours

One shift, not two

The kitchen opens at eleven and closes when the terrace empties. Nobody works a split, and the rota is out a fortnight ahead.

You eat off the board

Family at half four, off the same catch that goes to the terrace. It is not the tail end of anything.

Training

You will be taught the fish

Everyone on the payroll spends a morning at Elmina in their first month, learning what a good one looks like before it is cooked.

How to Apply.

No CV, no covering letter. Call the house between three and five on a weekday, or come to the kitchen door at four and ask for Kofi. Bring a day you can start.
