It is early, and it is not quiet

The Osu room opens at seven, so somebody is grinding by twenty past six, and the drum out on Spintex Road is warm by five on a Tuesday. The work is early, physical and loud, and everybody who does it is on their feet for most of it.

Nobody here has a sales target. If a kilo of the Volta is going to taste thin in the machine somebody has at home, we say so and sell them the Atlas instead. That is most of the job, and it only works if you are willing to have the conversation.

There are twenty two of us across the three rooms and the roastery. Nine of them started on a weekend counter, including the person who runs Labone.

What we pay for

Four things we buy for everybody who works here, from the first week rather than after a year of proving something.

Six weeks on the bar

Paid, on the rota, with somebody standing beside you until you are ready to be left alone with the machine.

The SCA course, on us

Everybody past a year sits the barista foundation. We cover the fee, the books and the day away from the room.

A bag a week

Whatever came off the drum on Tuesday, ground for whatever you brew on, yours to take home on the Friday.

The trotro fare

Paid weekly on top of wages, for whichever of the four rooms the rota sends you to that week.

Weighing green, moving sacks and writing up every batch beside the drum, which is heavy work and the best place in Accra to learn to roast.

Everything that leaves the roastery after the Tuesday roast goes out on the bike, so you will need a rider's licence and to know the city better than the map does.

Five hours behind the Saturday counter selling bags and pouring samples, which suits somebody studying in the week and wanting the hours to stay the hours.

How the hiring goes

Three steps, and the whole of it takes about a fortnight from the first email.

An email to jobs@roast.com.gh saying which of the four you want and why. Your own words are enough.

Come in for a shift

Four hours on the bar or beside the drum, paid at the day rate, so you see the actual work before either of us decides anything.

We answer either way

Within a week of that shift, in writing, with the reason. Nobody who has written to us has been left to wonder.

None of the four, but still keen?

Write anyway. Nine of the twenty two people here first turned up when nothing was open, and we kept the letter.
