
Our Story
A Ghanaian sushi house that buys from four Tema skippers, cuts what they land the morning it lands, and has never once put anything on a plane.

With Love
Nii came back from ten years in Osaka with a knife roll and no plan, and the first thing he did was argue with a fishmonger in Tema about what “fresh” meant. Eleven years later that argument is the whole restaurant.
Four rules
What We Hold To
None of these are difficult. They are only inconvenient, which is why so few kitchens keep them.
We buy the whole boat
Four skippers out of Tema, one out of Elmina, and whatever they land is what the counter cuts. If the sea gives us nothing on Thursday, Thursday is a kitchen menu.
Nothing is older than a day
Fish arrives before nine and is gone by close. Anything left goes home with the kitchen rather than into tomorrow's rice.
Nothing is flown in
No air-freighted tuna, no imported wasabi paste. The two things we cannot grow here — nori and rice — come by sea, in one order, twice a year.
The price on the board is the price
No market price, no service charge added at the end, no surprise on the bill. What the menu says is what you pay.
Who cuts the fish
The Kitchen
Four people run the counter, the pass and the bar between them. On a Friday you will meet at least three of them.

Nii Lartey Quaye
Ten years in Osaka, eleven behind this counter. He still cuts the first fish of every service himself.

Ama Serwaa Boateng
Runs the twelve seats and does most of the talking. Ask her what is good tonight and she will tell you the truth.

Ryo Tanaka
Everything hot leaves the kitchen past him. The ramen broth is his and he will not write the recipe down.

Efua Danquah
Trained on pastry, moved to nigiri, kept the bar. The sobolo highball is entirely her fault.

The Room
Twelve seats face the fish and forty sit behind them. The counter is reclaimed hinoki that arrived in Tema as ballast and cost more to plane flat than it did to buy.
