Three Ways

All three are the same kitchen and the same fish. What changes is how many of you there are and who is doing the choosing.

Sit in front of the fish and be fed for two hours, one piece at a time, in whatever order Ama thinks it should go.

A separate room off the main floor with its own door. Set menu, one bill, and a bar list you agree beforehand.

Two cooks, a counter and a cool box. We have done rooftops in Cantonments and a wedding in Aburi.

How It Goes

Ring, don't email

One conversation settles the date, the number and whether anybody at the table cannot eat something. Email takes three days to do the same work.

We write the menu a week out

Not before — we do not know yet what the boats will land. You get the shape of it now and the detail on the day.

Half on booking, half on the night

The deposit holds the room. There is no service charge on top and no cover, and the price we quote is the price on the bill.

A warm lantern-lit dining room in the evening

The Counter

Two hours, sixteen to eighteen pieces, and no menu to read. Ama decides the order, tells you what each thing is as it lands, and adjusts the whole thing around whoever is enjoying themselves most.
