What a day here actually is
Nobody has ever taken a job because of a page like this, so here is the honest version. It starts cold, it is loud by two in the afternoon, and there is a mop at the end of it.

The churn
Two people, one machine, and the milk that came down from Amasaman the night before. The room sits at four degrees, the radio is on, and everything the three Accra counters will sell that day is finished before nine.

11:00
The counter
Osu opens. Somebody wants to taste all eight, somebody else has never heard of sobolo, and both of them are right to ask. You will say the word tigernut about four hundred times.

22:30
The mop
Cabinet stripped, pans in the sink, floor last. Nobody goes home before the floor is done, and that has always included whoever owns the place.
Osu, and the van
Three jobs, open now
All three are in Accra, all three are paid every two weeks, and all three come with a tub a week. We hire slowly and people stay, so these do not come round often.
Part time
Scooper, Osu
Front of house at the busiest counter we have. You will scoop, you will explain sobolo forty times a day, and you will learn to read a queue before it forms. Being good with people matters far more here than being good with ice cream, because the second one we can teach you in a week.

Van driver, Accra
The cold van runs Cantonments, Labone, Spintex and everywhere else the map behind the till has a pin in it. We need a clean licence, a few years of Accra traffic already in your legs, and the patience to ring a customer twice before driving away.

Tuesday to Sunday, 7am to 4pm

Kitchen hand, churn room
Weighing, soaking, toasting, washing, and then a good deal more washing. Kwesi runs the room and will have you on the machine inside a month. If five in the morning is not your hour, say so now and we will keep your number for the counter instead.

Monday to Friday, 5am to 1pm

The other half of the offer
What we can promise
It is a small company. There is no health scheme, no gym card and no fruit basket in the corridor. There is this.
Paid every two weeks
On the Friday, whatever kind of month the shop has had. Ask anybody in the churn room whether it has ever been late.
A meal on every shift
Whatever the kitchen is eating that day. Usually waakye, and on a good Friday something a driver carried back from Kumasi.
Taught the machine
Everybody learns the churn, drivers included. Two of the four counter leads started on a Saturday shift.
A tub a week
Any flavour, taken home on a Sunday. Nobody has ever checked what anybody picks.
