Every sorbet is churned in Osu on the morning it goes out, and travels in an insulated bag with a brick of dry ice under the lid. Two tubs or more and the delivery anywhere in Accra is on us.

What a sorbet is

Fruit, ice and nowhere to hide

A sorbet has no fat in it, which sounds like a small difference and is actually the only one that matters. Cream is forgiving. It rounds off a fruit that was picked a week early and it will carry a flavour that is not really there. Water does neither of those things, so a sorbet tastes exactly as good as the hibiscus or the mango that went into it, and the only way to make a good one is to buy well in the morning and churn it before lunch.

Mostly fruit, by weight

About two thirds of a tub is the fruit itself. Ours is bought at Makola or Madina on the morning it is churned, which is the whole reason we can only make so much of it.

No milk, no cream, no egg

Nothing in a sorbet came out of a cow, so this is the tub that goes to the table when somebody at it cannot take dairy, and the one that survives the drive to Aburi in July.

Give it ten minutes

Water freezes harder than cream does. Leave a sorbet out of the freezer for ten minutes before you go at it with a spoon. It is not being difficult, it is being sorbet.

The shelf follows the fruit

Sobolo is on all year, because hibiscus dries and keeps and the ginger never really stops. Mango and chilli is only here while the mangoes are, which in Accra means March to June and a short second run in November. When they go, the slot goes to whatever is good that month. Last year it was pineapple and mint, and we are still being asked about a soursop we only ever made twice.
