Sobolo sorbet
Hibiscus, ginger and pineapple, churned without a drop of cream.
It is the flavour we opened with and the one that goes first every Saturday. Sharp at the front from the hibiscus, sweet at the back from the pineapple, and cold in a way cream never quite manages. There is no dairy in it at all, though almost nobody orders it for that reason.

What is actually in it
Dried hibiscus calyces from Bolgatanga, pineapple juice, fresh ginger, cane sugar, water and a squeeze of lime. That is the entire list.
No milk, no egg, no stabiliser and no colouring. The colour is what hibiscus does on its own.

How it reaches you
Every order leaves the shop in a cool box packed with dry ice, and the van covers Accra the same afternoon if the order is in before three. Kumasi has its own counter in Adum, so nothing has to travel that far.
If it reaches you soft, ring us the same day and the next one is free. It has happened four times and we have never argued about it.

Forty eight hours, start to tub
Every flavour on the site has a version of this. We are only writing it out for the sorbet because it is the one people ask about.

It starts in Bolgatanga
The calyces are dried in the north and come down on the Thursday lorry. We buy a season at a time from two families and we pay them on the day, which is the only part of this anybody has ever thanked us for.

Steeped cold, never boiled
Boiling sobolo makes it dark and flat. Ours sits cold with the ginger and the pineapple for fourteen hours instead, and that is the whole reason the colour survives the freezer.

In the tub by seven
Churned at five in Osu, sealed by half past six, on the van before the traffic builds on the Ring Road. Nothing that leaves this kitchen has been frozen twice.
